Fresh Egg Pasta



Fresh Egg Pasta

Makes enough for about 4 to 6 servings

What You Need

Ingredients
2 cups flour, plus extra for rolling the pasta
1/2 teaspoon salt
3 large eggs

Equipment
Mixing bowl
Fork or dough whisk
Pasta machine
Baking sheet
Clean dishtowel

Instructions
1. Combine the Flour and Salt: Whisk together the flour and salt with a fork in a medium mixing bowl.

2. Add the Eggs: Create a deep well in the middle of the flour and crack the eggs into this well. Whisk the eggs with the fork to combine.

Note: You can do this on the counter-top "Italian Grandmother Style" if you prefer, but I find it's easier and less messy to do it in a bowl. For food-processor instructions, see below.

3. Begin Combining the Flour and Eggs: As you whisk the eggs, begin gradually pulling in flour from the bottom and sides of the bowl. Don't rush this step. At first, the eggs will start to look like a slurry. Once enough flour has been added, it will start forming a very soft dough. Don't worry if you haven't used all the flour.

4. Knead the Pasta Dough: Turn the dough and any excess flour out onto a clean counter. Begin gently folding the dough on itself, flattening, and folding again. It will be extremely soft at first, then gradually start to firm up. Once it's firm enough to knead, begin kneading the dough. Incorporate more flour as needed to prevent the dough from sticking to you or the counter. Slice into the dough with a paring knife; if you see lots of air bubbles, keep kneading. The dough is kneaded when it forms a smooth elastic ball and has very few air bubbles when cut.

5. Rest the Pasta Dough: Clean and dry the mixing bowl. Place the ball of dough inside and cover with a dinner plate or plastic wrap. Rest for at least 30 minutes.

Note: At this point, the pasta dough can be refrigerated for up to 24 hours. Let it come back to room temperature before rolling.

6. Divide the Pasta Dough: Sprinkle a baking sheet generously with flour and scrape the ball of dough on top (it will stick to the bowl; use a spatula or bowl scraper if necessary). Divide the dough into four equal portions. Dust the portions with flour and cover with a clean dishtowel.

Note: The name of the game at this point is to keep everything well-floured to prevent the pasta from sticking to itself or the roller as you work. If the dough starts to feel sticky as you roll it, sprinkle it with flour. Also sprinkle flour on any pasta you're not working (rolled, cut or otherwise) with and keep it covered with a dishtowel.

7. Begin Rolling Out the Pasta: Set your pasta machine to the thickest setting (usually marked "1"). Flatten one piece of dough into a thick disk between your hands and feed it through the pasta roller. Repeat once or twice. Fold this piece of dough into thirds, like folding a letter, and press it between your hands again. With the pasta machine still on the widest setting, feed the pasta crosswise between the rollers (see picture). Feed it through once or twice more until smooth. If desired, repeat this folding step. This helps to strengthen the gluten in the flour, giving it a chewier texture when cooked.

8. Thin the Pasta: Begin changing the settings on your roller to roll the pasta thinner and thinner. Roll the pasta two or three times at each setting, and don't skip settings (the pasta tends to snag and warp if you do). If the pasta gets too long to be manageable, lay it on a cutting board and slice it in half. Roll the pasta as thin as you like to go. For linguine and fettuccine, I normally go to 6 or 7 on the KitchenAid attachement; for angel hair or stuffed pastas, I go one or two settings thinner.

9. Cut the Pasta: Cut the long stretch of dough into noodle-length sheets, usually about 12-inches. If making filled pasta or lasagna, proceed with shaping. If cutting into noodles, switch from the pasta roller to the noodle cutter, and run the sheet of pasta through the cutter. Toss the noodles with a little flour to keep them from sticking and gather them into a loose basket. Set this basket on the floured baking sheet and cover with a towel while you finish rolling and cutting the rest of the dough.

Note: I find it easiest to roll all the pasta at once before proceeding to cutting it into noodles. I sprinkle the sheets of pasta liberally with flour and overlap them on a floured baking sheet, covered with a towel.

10. Cooking, Drying, or Freezing the Pasta: To cook the pasta immediately, bring a large pot of water to a boil, salt the water, and cook the pasta until al dente, 4-5 minutes. To dry, lay the pasta over a clothes drying rack, coat hangers, or the back of a chair, and let air dry until completely brittle. Store in an airtight container for several weeks. To freeze, either freeze flat in long noodles or in the basket-shape on a baking sheet until completely frozen. Gather into an airtight container and freeze for up to three months. Dried and frozen noodles may need an extra minute or two to cook.

Additional Notes:
• Pasta Dough in the Food Processor: Combine all the ingredients in the bowl of a food processor. Pulse until combined, then run the processor continuously until a dough is formed. Proceed with kneading and shaping the dough as directed.

• Rolling and Cutting Pasta by Hand: It can be done! Divide the dough into four pieces and mimic the action of a pasta roller with a rolling pin. Roll as thin as possible, lifting and moving the dough constantly to make sure it doesn't stick. Sprinkle the dough generously with flour and then gently roll it up. Use a very sharp chef knife to cut the roll cross-wise into equal-sized noodles. Shake out the coils, toss with flour, and proceed with cooking.

In the pan, chop onions and sauté in olive oil. Add in diced tomatoes. Then add in zucchini noodles. Cover with lid and put on low heat while you do the next step.
In a mini blender, blend garlic cloves (I use 3- love garlic), fresh basil, and olives.
Mix both together and add a little olive oil.

Pecan & Banana Whoopies

Ingredients
130g Flour 
30g Whole wheat flour
12g Wheat germ
6g Baking powder 
4g Salt
80g Creamy butter 
170g Sugar
5g Vanilla extract 
2 Eggs
3 Bananas, very ripe & pureed 
80g Crushed pecan nuts

Chocolate Cream

Ingredients
20cl Liquid full cream
150g Dark chocolate 
50g Sweet butter 

Directions

Whoopies
Preheat the oven 180 degrees Celsius (355 degrees fahrenheit).
Mix & sift the flour, baking powder & salt into a bowl.
Blitz the butter, sugar & vanilla extract for 3 minutes in a mixer until the mixture is light & clear. Add the eggs.
Add the pureed bananas & pecans & stir for 2 minutes. Gently add the flour mixture.
Fill the molds in the whoopie pan with the aid of a pastry bag.
Place in the oven for 10 minutes.
Remove from the oven & let it settle.
 
Chocolate Cream
Boil the cream & pour it over the chocolate.  Whisk until the mixture is uniform & then add the softened butter. The texture should be like that of a heavy cream.
Begin the assembly by placing a spoon between each biscuit.
 
Suggestion
Dust with icing sugar for a beautiful presentation.

Heart-shaped Strawberry Fraisier Cake

Heart-shaped Strawberry Fraisier Cake

Fraisier cake is a traditional French recipe that looks incredible but can sometimes be tricky to make. However, this recipe has a few short cuts, so if you're not on the same level as the Bake Off stars, you can still have a go at this showstopping cake.

It's filled with the dreamy duo of strawberries and cream, before being topped with a delicious apricot marzipan icing and chocolate hearts. And it tastes just as good as it looks!

Ingredients

225g (8oz) soft margarine
225g (8oz) caster sugar
225g (8oz) self-raising flour
1 teaspoon baking powder
Grated rind of 2 lemons
4 medium eggs
6 tablespoons limoncello liqueur
For the filling:
400g (14oz) strawberries, hulled
3 tablespoons cold water
2 teaspoons powdered gelatine
150ml (1/4 pint) double cream
500g (1lb 2oz) carton luxury vanilla custard
For the topping:
2 tablespoons apricot glaze or apricot jam minus the pieces of fruit
250g (9oz) readymade marzipan
Little icing sugar
Few small strawberries
Few chocolate hearts

Method

1 Preheat the oven to 170°C (150°C fan) Gas 3. Grease a 20cm (8 inch) heart shaped springform tin with a little oil then line the base with a piece of non-stick baking paper.

2 Add the margarine, sugar and flour to a large bowl, electric mixer or food processor. Add the baking powder, lemon rind and eggs and beat together until smooth.

3 Spoon into the lined tin, level the surface and bake for about 35-40 minutes until well risen, golden brown and a skewer comes out cleanly when inserted into the centre of the cake.

4 Leave to cool for 10 minutes then loosen the edge, remove the tin and lining paper and cool on a wire rack.

5 When the cake is cold, cut into two thinner rounds, trimming the top level if it is a little domed, then spoon the limoncello over the cut sides. Wash the cake tin and line the base and sides with two strips of clingfilm. Put one of the cake halves in the tin and pull up the clingfilm if needed so that it slightly overhangs the top of the tin.

6 Sort through the strawberries, reserve the medium sized ones for the side of the cake and the larger ones for slicing. Cut the medium sized ones in half and arrange in a ring around the outside of the cake in the tin so that the cut edge is pressed against the clingfilm. Slice the rest and arrange as an even layer to cover the base cake.

7 Add the water to a small heatproof bowl, sprinkle over the gelatine powder and leave to soak for 5 minutes then stand the bowl in a saucepan of just simmering water and heat until the gelatine has dissolved and become a clear liquid.

8 Whisk the cream until it forms soft swirls in a bowl then fold in the custard. Gradually fold in the dissolved gelatine in a thin steady stream then pour the custard mix over the strawberries in the tin and chill for 10 minutes until just setting.

9 Add the second cake half to the tin and press lightly into the custard. Gently spread the apricot glaze or jam over the top of the cake. Knead and roll out the marzipan on a piece of non-stick baking paper then cut into a heart, using the cake tin as a guide. Lift over the top of the cake and press into place with fingertips dusted with icing sugar. Chill for at least 4 hours.

10 When ready to serve, unclip the sides of the tin, peel away the clingfilm, then carefully lift the cake off and transfer to a plate. Decorate the top with the small strawberries and piped chocolate hearts, if liked.Prep Time 45 minutesCook Time 35 - 40 minutesNutrition Information Makes around 10 slices

To make chocolate hearts:

Melt 50g (2oz) dark chocolate in a bowl set over a saucepan of very gently simmering water. Spoon into a piping bag made of non-stick baking paper, snip off the tip then pipe heart shapes over a sheet of non-stick baking paper set on a baking tray. Chill until set then peel off the paper and add to the top of the cake when ready to serve.

Red Velvet Heart Cake Pops

Red Velvet Heart Cake Pops

Equipment

You will need lolly-pop sticks for this recipe and a block of oasis or polystyrene. You can use white chocolate melts for this recipe and tint with red food colouring. We used red candy melts for the recipe, available from cake decorator and kitchen supply shops.

Ingredients

180g butter, softened
1 1/2 cups (315g) caster sugar
1 teaspoon vanilla extract
2 eggs
21/2 cups (375g) self-raising flour
2 tablespoons cocoa powder
1 cup (250ml) buttermilk
1 tablespoon white vinegar
1 teaspoon bicarbonate of soda
1 tablespoon Pillabox red liquid food colouring
100g cream cheese, softened
1/2 cup (80g) pure icing sugar
Icing sugar mixture, to dust
300g red candy melts
2 teaspoons vegetable oil, optional

Method

Step 1

Preheat oven to 180C. Grease and line a 22cm square cake pan with baking paper.

Step 2

Use an electric mixer to beat the butter, sugar and vanilla extract together until pale and creamy. Add the eggs, one at a time, beating well between each addition. Add the flour, cocoa powder and buttermilk, in batches, until well combined. Add the vinegar, bicarbonate of soda and food colouring and stir to combine.

Step 3

Spoon mixture into the prepared pan and use the back of a spoon the smooth the surface. Bake in preheated oven for 1 hour or until a skewer inserted into the centre of the cake comes out clean. Remove from oven. Set aside for 5 minutes to cool slightly before turning onto a wire rack to cool completely.

Step 4

Break the cake into small pieces and transfer to the bowl of a food processor. Process until fine crumbs form. Transfer to a bowl. Place the cream cheese and icing sugar in the bowl of a food processor and process until smooth.

Step 5

Line an oven tray with baking paper. Dust a clean work surface with icing sugar mixture. Shape the mixture into a 2cm-thick disc. Use a 4.5cm heart-shaped pastry cutter to cut hearts from the cake mixture and place on the lined tray, rerolling any excess cake mixture to make more hearts. Loosely cover with plastic wrap and place in the fridge for 1 hour or until firm.

Step 6

Place the red candy melts in a heatproof bowl over a saucepan half-filled with simmering water. Remove from heat. Stir with a metal spoon until candy melts. Add vegetable oil if the mixture is too thick.

Step 7

Dip the end of 1 lollypop stick in chocolate then insert into the bottom of a heart. Return to the tray. Repeat with remaining cake discs.

Step 8

Use a spoon to carefully ladle candy melts over the heart to coat. Gently tap on the side of the bowl to remove excess melts and smooth the surface. Return to the lined tray. Repeat with remaining hearts and melts. Place in the fridge for 15 minutes to set completely.

Ingredients

For the waffles:

100 g of melted butter
1 teaspoon of dry yeast
½ tablespoon of salt
300 g of flour
400 ml of cold milk
50 g of sugar 2 eggs

For the coulis:

200 g of strawberries 1
00 g of sugar

Preparation

Traditional preparation:

Whisk the eggs and sugar until you obtain a frothy mixture.

Add the other ingredients and mix until smooth.

Empty the mixture into the moulds.

Preheat the oven to 200º.Put the moulds on its tray and bake for 8-10 minutes at 180º.Remove from the oven and empty the moulds, turning them over so that they are face up and bake for 5-8 minutes more until they have browned.

For the strawberry coulis, whisk the strawberries with the sugar until they are completely pureed.

Pass the mixture through a sieve so that you are left with a smooth sauce with no seeds.

Set aside.

When baked, serve together with the strawberry coulis. If you want you can warm up the coulis and serve everything hot.

Instructions with Mixer:

Put the liquid ingredients in the glass and blend for 10-15 seconds at speed 6.

Add the other ingredients and blend everything for a few seconds at speed 5 until smooth.Pour the resulting mixture into the moulds.

To make the strawberry coulis, add the sugar and grind for 30 seconds at speed 5-10, add the strawberries and lemon juice and blend for 15 seconds at speed 5-10. Set aside.

The rest of the preparation is identical to the traditional method.

Spicy Beef and Chocolate Casserole

Yes, beef and chocolate cooked together! A zany idea, but it works, as it has done for centuries in Mexico, where chicken or turkey are also cooked with chocolate, to produce “Mole” a traditional dish. Only a little chocolate is used. It thickens the juices as it cooks, resulting in a sauce that is dark and velvety smooth. Combined with the hotness of the chillies and the aroma of cumin, cinnamon and parsley this is a recipe to surprise your loved ones.  The puff pastry heart croutons are not a must, but could add that touch of romance if you are cooking a valentine supper.

Serves 4

Casserole

2 tablespoons olive oil
1 red onion, sliced thinly
½ kg good quality braising beef cut into 2.5 cm cubes
1 medium size red chilli, seeded and chopped
1 teaspoon ground cumin
½ teaspoon ground cinnamon
400g can Italian plum tomatoes
1 bay leaf
1 tablespoon fresh chopped flat leaf parsley
40g plain chocolate
salt
freshly ground black pepper

Pastry Croutons

200 g ready made puff pastry
a little beaten egg
1 tablespoon pine nuts

1. Heat the oil in the heart casserole over a medium setting. Fry the onion until beginning to soften, but not brown.

2. Add the cubed meat and brown evenly, stirring occasionally. Stir in all the remaining ingredients with one full (tomato) can of water. Season.

3. Cover and cook in the oven for 2-2½ hours on 120ºC. Stir once during cooking. When the meat is tender, remove the casserole from the oven and raise the temperature for the pastry croutons.

4. Whilst the casserole is cooking roll the pastry out to the thickness of a R5 coin. Use a large heart shaped cutter (approx 9cm long) to cut out 4 hearts. Brush with a little beaten egg and press a few pine nuts into the centre of each. Chill the hearts on a baking sheet for at least 1 hour before cooking

5. Bake the hearts for 10-15 minutes on 200ºC until well-risen and golden brown.

Serve a portion of the beef and chocolate casserole topped with a pastry heart.

Ginger 'Soy' Salmon

Ingredients

1- 7oz. piece wild salmon
1 handful snow peas
½ carrot, julienned
½ zucchini, spiralized
2 handfuls baby spinach
for marinade 1 tsp. extra virgin olive oil
2 tbsp. coconut aminos or soy sauce
1 tbsp. lime juice
1 garlic clove, grated
1 tsp. grated ginger

Instructions

Place all of the veggies except for the spinach in the bottom of the Lékué steam case, season with salt and pepper to taste and microwave on high for 90 seconds. Place the salmon on top of the par-cooked veggies and pour over the marinade and microwave for an additional 2 minutes. Serve over top of the reserved raw spinach which will wilt and soak up any juices from the marinade and the fish.
